How to make RAJU(Naatu Kodi) GARI KODI PULAO
RAJU GARI KODI PULAO
Ingredients used in RAJU GARI KODI PULAO
• Ghee - 2 teaspoons.
• Shallots - 125 grams.
• Cardamom - 1 number.
• Cloves - 1 number.
• Cinnamon - 1 stick.
• Bay leaf - 1 number.
• Shajeera - 1/2 tea spoon.
• Onions(slices) - 1 number.
• Ginger garlic paste - 1 tea spoon.
• Green chili paste - 1 tea spoon.
• Chicken - 500 grams.
• Salt - to taste.
• Basmati rice - 250 grams.
• Water - 500 ml.
• Curd - 2 tea spoon.
• Chopped coriander leaves - 1/2 bunch.
• Chopped mint - 1/2 bunch.
• Garam masala - 1 pinch.
• Boiled eggs - 2 numbers.
• Butter - 2 teaspoons.
• Cashewnuts - 1 tablespoon.
• Onions, green chillies, slice of lemon(garnising) - 1-2 numbers.
Method:
Take melted ghee in a pressure cooker and add peeled shallots, cardamom, cloves, cinnamon, bay leaf, shahi jeera, thickly sliced onions and saute it.
After a 1 minute add ginger garlic paste, green chili paste and saute it well.
Then add the chicken on high flame and mix it, now add salt, soaked basmati rice, water, curd, chopped coriander leaves, chopped mint, a pinch of garam masala powder and mix it well then let it cook with the lid on it.
Cook till 2 whistles at high flame and then keep it aside.
For garnishing now take butter in hot pan and add boiled eggs to saute it.
Meanwhile just open the cooker to check the chicken and stir it before serving on a plate.
In a hot pan with melted butter add cashews and toss it, then garnish with sauteed eggs, onions, green chilies, aslice of lemon and cashews.
